I made this sweet potato chili a few weeks ago and have made it since about four other times. I would make a big batch and take it to work for lunch. It was a perfect lunch during the Whole 30 because it is so flavorful and really filling. Depending on your partner, this might make a great Valentines Day dinner. Serve with cold beer and lot of love.
I used beef tips that we got from our first ever Butcher Box (highly recommend!). My other Paleo chili recipe uses ground beef and you might be able to use that here as well. But, I really liked the combination of the larger chunks of beef and sweet potato. If you try it with another cut of beef, let me know how it works.
I made this recipe in the Instant Pot and it was ready in about 20 minutes. I’ve included stove top instructions as well, just in case you haven’t jumped on the Instant Pot train.
