Beef Tip and Sweet Potato Chili

I made this sweet potato chili a few weeks ago and have made it since about four other times.  I would make a big batch and take it to work for lunch.  It was a perfect  lunch during the Whole 30 because it is so flavorful and really filling. Depending on your partner, this might make a great Valentines Day dinner.  Serve with cold beer and lot of love.

I used beef tips that we got from our first ever Butcher Box (highly recommend!).  My other Paleo chili recipe uses ground beef and you might be able to use that here as well.  But, I really liked the combination of the larger chunks of beef and sweet potato.  If you try it with another cut of beef, let me know how it works.

I made this recipe in the Instant Pot and it was ready in about 20 minutes.  I've included stove top instructions as well, just in case you haven't jumped on the Instant Pot train.

Beef Tip and Sweet Potato Chili

A warm and hearty spicy beef chili. Whole 30 and Paleo compliant.

Ingredients

  • 1 pound beef tips or stew meat
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14 ounces
  • 1 canned chipotle pepper + 2 teaspoon adobo sauce from the can
  • 2 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 teaspoon kosher salt
  • 2 sweet potatoes chopped
  • 2 tablespoon olive oil

Instructions

  • Add the olive oil to the Instant Pot and using the saute mode, add the onions and garlic.  Saute until translucent (about 2-3 minutes).  Add the spices (cumin, chili powder, salt, chipotle, adobo sauce).
  • Turn off saute mode and add tomatoes and beef.
  • Cook under high pressure for 20 minutes.  Once done, use the instant release and add the sweet potatoes.  Cook under high pressure for another 3 minutes.
  • Sprinkle with diced cilantro.

  • Saute the onion and garlic in the olive oil in a saucepan.  Add the spices.
  • Stir in the tomato and beef.
  • Cover and let simmer for 30 minutes.  Add the sweet potatoes and cook for an additional 15 minutes.
