I didn't set out to make the best easy vegan chocolate pudding recipe.
After our travels, to Paris, Japan and Hawaii, I realized that so many cultures have pudding as dessert options. In Paris, there was the richest chocolate mousse; sold at convenience stores; in Japan chestnut pudding was a treat and in Hawaii; the Vietnamese restaurants would sell the best coconut tapioca pudding.
I just wanted to create a homemade chocolate pudding recipe with the following requirements:
- simple ingredients
- easy to make
- refined sugar free
- vegan
- something that feels indulgent but really isn't.
Why This Recipe is Great
Refined Sugar Free: As I try to create more desserts without refined sugar, I realize how much we don’t need it. Using natural sweeteners, in this case, maple syrup, gives it just the right amount of sweetness and doesn’t cause a sugar crash. There are so many health benefits associated with reducing our sugar content and I got a good result with just a touch of maple syrup.
Vegan: While I didn’t seek out to make a vegan pudding, this one came together quite easily. Using full fat coconut milk you get the extra creamy consistency and you don’t need to add any other milk. Simple: This recipe comes together in minutes. Most of the cook time is really just time to cool in the refrigerator.
What Ingredients are Needed for Vegan Chocolate Pudding
Maple Syrup: Instead of coconut sugar, this recipe uses maple syrup. It is my go to refined sugar free sweetener.
Full-Fat Coconut Milk: While this recipe could work with non-dairy milk, I only tested it with canned coconut milk. If you don’t like the flavor of the coconut milk, you can use half coconut milk and any other dairy-free milk.
Corn Starch: A little bit of corn starch and water added to the mixture thickens it up quickly.
Hu Chocolate Bars: These are our go-to chocolate. The company uses quality chocolate and are refined sugar free but don’t use the sugar replacements either (stevia, etc). While this chocolate pudding recipe uses dairy free and refined sugar free chocolate bars for its rich flavor, you could also use dairy-free chocolate chips.
How to Make Vegan Chocolate Pudding
With this recipe, you basically simmer the coconut milk and maple syrup in a medium saucepan under medium heat.
In a separate bowl, combine corn starch and water. Add the cornstarch and water to the coconut milk and maple syrup. It should start to thicken up right away.
Once that happens, remove from heat and add the chocolate bar (chopped into pieces). Stir until it melts completely. The result is a traditional chocolate pudding with a smooth texture.
Once the pudding is heated through, place it in a bowl and cover with plastic wrap. Store in the refrigerator until cool. Top with homemade whipped cream and a few chocolate shavings.

- ¼ cup maple syrup
- 1 cup water
- ½ cup corn starch
- 1 bar HU Chocolate or, 1 cup of refined sugar free chocolate chips
