    Popcorn!

    I cannot believe I am even writing a post about this.  But, I am.

    I feel that I must tell you about the most amazing combination I have recently discovered.

    Popcorn.  Just plain ol' popped in a pan with some oil.  Popcorn.

    I was making caramel corn (which I didn't love so won't be sharing just yet) and started sampling the freshly popped popcorn.

    I had forgotten about it.   I had forgotten how good it is --sprinkled with salt and a little bit of nutritional yeast.

    AND--someone recommended trying it with coconut oil instead of butter.

    WOW!

    AMAZING!

    Melt a little (you really don't need too much) and toss it around.

    SO GOOD!  And, from what I hear, good for you too.  (At least better than butter.)

    Sprinkle some crushed up kale chips on there and you have all of your major food groups.  I think.
