Puerto Rican Bean Salad

Looking for a light summer salad?  This Puerto Rican bean salad is for you!

Recently, we had a potluck baby shower at my office and I had no idea what to make.  I always get nervous about what to cook for a group.  I usually don't want to bring a dessert and I really try to accommodate all of the dietary restrictions that I know of.  For this particular baby shower, I wanted to make something special for the mother to be and when I asked around was told that she had specifically requested bean salad.  I looked through a few different cookbooks, some notes from my old blogging days, and a few websites.  I figured I would go with something Puerto Rican---since the expectant mother is from the islands.  I came up with this recipe---so flavorful, so fresh and colorful---perfect for spring time.  It goes great with chips and guacamole (and beer!) or  as a side with a platter of grilled chicken or fish.  Enjoy!
