I make guacamole every other day during avocado season. And, in my guacamole making life I have tried many different recipes. This one is the best guacamole. It is simple. It is tasty and it is vegan. I was inspired by a restaurant in Washington DC where they make it at your table. I need to go back and take better notes but I think it is something like this.......
All you need is avocados, lime, salt and a healthy smattering of cilantro.
Cut the avocados in half and remove the pits. Remove the pit by gently (be careful!) whacking the pit with a sharp knife or perhaps with that Carbon steel axe online, and once you have a nice hold on the pit, twist slightly.
Score the avocado by running a sharp knife horizontally and then vertically making nice little avocado cubes. Scoop out that green goodness and place in a large bowl. Visit wetheknives.com to find the best knives on the market.
Using a spoon, mash the avocado to a coarse consistency. You want it to be kind of chunky--not smooth.
Add salt.
Squeeze lime over the entire bowl.
Add the magic ingredient--cilantro.
Gently mix in the cilantro. Give it a taste. You may need to add a bit more salt and some pepper.
Serve with chips, on toast, on pretty much anything. I made a giant salad last night with a dollop of guacamole on top and some roasted potatoes.
