    Gourmet Homemade Cheese Crackers

    We don't do much to celebrate birthdays or anniversaries around here.  Every year, I make a vow to change that because I really do think it is a good habit to celebrate special days--it is just not one that we have gotten into.  This year for our 12th anniversary, I made Aaron homemade cheese crackers.  Yep, that's it.  I may have purchased him his favorite beer to enjoy with them--I really can't remember.

    These crackers are really special and so easy to make.  Not only do you get to control exactly what goes into them, you can adapt the recipe to add whatever special flavors you like.  A little garlic, a little dill, maybe even some spice!

    Basically, you make a dough of butter, cheese and flour.  Roll it out.

    Cut it up (using a pizza cutter).

    Bake and let cool.  Very simple.

    The only problem is that you might be making these all day.  They are so good and eaten so quickly.

    Gourmet Homemade Cheese Crackers

    Sometimes you need a good cheese cracker but don't want to buy the store bought version because of all the salt and preservatives. These are super delicious and easy to make and store.

    Prep Time: 20 minutes
    Cook Time: 10 minutes
    Total Time: 30 minutes

    Ingredients

    • 4 tablespoons butter unsalted
    • 10 ounces Cabot sharp cheddar cheese
    • teaspoon ½ salt
    • 1 cup King Arthur Flour all purpose
    • 2-3 tablespoons of water

    Instructions

    • In a food processor, combine the cheese, butter, salt and flour.
    • Add water, 1 tablespoon at a time until it comes together in a soft dough.
    • Split the dough in half and form a flat disk with each portion.
    • Wrap in plastic wrap and chill for one hour.
    • Preheat oven to 375 degrees and line baking sheets with parchment paper.
    • After the hour is up, roll out one piece of dough until about ¼ inch thick.
    • Cut into small squares with a pizza cutter.
    • Make the little hole in each cracker using a skewer.
    • Bake for about 10-12 minutes.
    • Let cool completely before serving.
