When I send Aaron to the grocery store, he comes home with the most random things. Last week, he bought chips, avocados, pork loin, and orange soda. I quickly made a guacamole (with arugula!-post coming soon) and dumped the orange soda down the drain.
The pork sat in the refrigerator for a few days until it became clear that neither of us had a plan for it. I decided since I didn't have a lot of time I would prepare it crock pot style and make carnitas.
Here is what you do:
1) I filled the bottom of the crock pot with sliced onions and the inside of a half of a lime after I tried to squeeze the juice out. (If you have just about 1 Tablespoon of lime juice that would work just as well.)
2) Cut the pork loin into chunks and sprinkle them with a mixture of the following spices 1T Kosher salt, 1 T cumin, 1 teaspoon coriander, ½ teaspoon chili powder, and about 1 teaspoon pepper. Our pork loin was about 4 pounds.
3) Then I seared the pork in batches. Just throw them on a hot skillet long enough for them to get cooked up a little on each side.
4) Throw all the pork into the crock pot and almost cover with chicken broth-probably about 4-5 cups.
5) Let cook for 4-6 hours on low. Come home to an almost finished dinner!
We sprinkled some carnitas on tortilla chips, added some fresh tomatoes, black beans, cheese and cilantro for quick and delicious nachos. Or, you could fill a tortilla with beans, rice, carnitas, salsa, guacamole for a huge hunger satisfying burrito.
Any way you use it, you will love it!
