Nut Butter Banana Muffins (Paleo Friendly)

Peanut Butter Banana Muffins | Perfect muffin for Fall. Easy to make Paleo. No added Sugar.

A perfect recipe for early morning muffins. No added sugar. Paleo adaptable.

34 very ripe bananas, smashed

1/3 cup nut butter (almond butter, peanut butter, or coconut peanut butter)

1 Tablespoon coconut oil, melted

three eggs

1/3 cup + 2 Tbs coconut flour

1 tsp cinnamon

1 tsp salt

1 tsp baking powder

1 tsp baking soda

1/2 cup chocolate chips

1/2 cup walnuts


  1. Heat over to 350 degrees and prepare muffin pan with either liners or by greasing the pan with coconut oil.
  2. In a stand mixer, using the paddle attachment, mash the bananas.  Add the nut butter, coconut oil, vanilla, and eggs until combined. (If you are using the coconut peanut butter, omit the coconut oil.)
  3. In a separate bowl, mix together the flour, baking powder, baking soda and salt.
  4. Fold the dry mixture into the wet.
  5. Fold the chocolate chips and walnuts into the batter.
  6. Divide the batter between the muffin tins.  I like to use an ice cream scoop for the large muffins or a small cookie scoop when I am making mini-muffins.
  7. Bake for 14-16 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool on baking rack.
