A simple healthy recipe to add a bit of brightness to your day.
1 1/2 cups almond milk
1/4 cup chia seeds
1 tsp vanilla extract
1 Tablespoon honey
1 mango, diced
1/4 cup coconut smiles
1 Tablespoon shredded coconut (optional)
In a medium sized bowl, mix together the milk, sweetener and vanilla. Add the chia seeds and stir gently. You want to make sure that all of the seeds are exposed to the liquid.
Cover with plastic wrap and allow to chill for about 12 hours. Try to take the time to stir it at least once during the chill time.
When serving, dish chia pudding into serving bowls, top with mango, coconut smiles and sprinkle with the shredded coconut.
