This is the BEST vegetarian chili recipe and meat eaters will even love it. Make it in the Instant Pot in minutes.
1 onion, diced
1 clove garlic, minced (optional but recommended)
1 tablespoon olive oil
2 cans diced tomatoes
1-2 canned chipotle peppers
1 can black beans
2 teaspoons cumin
2 teaspoons chili powder
2 teaspoons salt
1 teaspoon garlic powder (omit if using fresh garlic)
1/2 cup coarsely ground cornmeal
In a small bowl, mix together the spices.
Using the saute function in the Instant Pot, gently saute the onions and garlic in the olive oil. Once translucent, add the spices and chipotle peppers. Stir together until fragrant.
Add tomatoes and black beans.
Cook on high pressure for 20 minutes.
Release the pressure and open the pot. Add the cornmeal and cook on high pressure for another 10 minutes.
Self release the pressure and serve!
